Rosalie's Summer Salad

It's not Summer yet but the sun is shining!!  It was a lot warmer today --near 60 degrees! WOW!  It made me think of summertime.  I got inspired at the grocery this morning when I saw some really good looking organic cherry tomatoes.  Cucumbers and avocados are always good and so is my favorite herb, cilantro.  Last Summer we couldn't get enough of this salad, just kept making it over and over.  Remember I told you about one of best girlfriends, Hong.  I also told you a little about her mother, Rosalie.   Hong made this salad for me last summer but the recipe is her mother's creation.  Like I said, Rosalie is an excellent cook!  I know you will love it as much as my family does --try it and see!

Rosalie's Summer Salad
(this recipe can be doubled, tripled, etc.....!)

1/2 english cucumber, peeled and seeded
1/2 pint of cherry tomatoes, halved
1 avocado, diced
1 bunch of cilantro (about 2 Tablespoons chopped)
2 Tablespoons Balsamic Vinegar (or to taste)
3 Tablespoons Olive Oil (or to taste)
freshly ground pepper
kosher salt

Put tomotoes, cucumber, avocado, and cilantro in a bowl.  Season with kosher salt and freshly ground pepper (about 1 1/2 teaspoons salt and 1/2 teaspoon pepper).  Pour balsamic vinegar and olive oil over salad.  Mix with a large spoon to make sure everything is coated with balsamic and oil.  Taste to see if more seasoning is needed. Enjoy!
