I watched Mina Stone prepare this dish on a Bon Apetit instagram story. She was in her own kitchen, and it was at the beginning of the pandemic lockdown. I was so excited to try the recipe and when I did I knew it would forever be my most favorite comfort food! I have both of Mina's cookbooks and I highly recommend them as they are full of easy and delicious recipes. What more could you want from a cookbook? I also love that she includes a couple of long (attached) ribbons to mark recipes - so so helpful!
