Easy Flank Steak

Yes, I know, you have some favorite prepared marinade that you use.  That is fine.  But....this is soooo easy!  If you leave out the lemongrass and shallots it is probably takes only seconds more than using a prepared (more processed!) marinade.  Why not try it? 

Grilled Flank Steak
adapted from a June 1998 Gourmet recipe

1 1/2 pounds flank steak
1-2 shallots chopped
1 stalk lemongrass chopped (click this link for my lemongrass primer)
1/4 cup balsamic vinegar
2 Tablespoons soy sauce
2 Tablespoons light brown sugar
kosher salt
freshly ground pepper

Get a large zip-loc type bag ready.  Cut steak, at a 45 degree angle,  into two pieces.  Season with salt and pepper and place in zip-loc bag.  Chop shallots and lemongrass and add to bag with steak.  Stir balsamic, soy sauce, and brown sugar in a meauring cup and pour into bag with steak.  Seal bag and place in refrigerator to marinate for at least 2 hours and up to 2 days.
Prepare indoor or outdoor grill.  Lightly oil indoor grill pan.  Heat pan to medium-high heat and grill meat about 7-9 minutes per side for medium rare.  Transfer steaks to cutting board and let stand 10 minutes before slicing. 
This recipes serves about 4 people.  This recipes doubles very easily.
