I have so so many recipes that have become new favorites over this past year. This is an especially delicious and easy one. The key is to heat oven up to 450 degrees, it really needs to be hot! Another important part is to watch them closely because it will only take about 10 minutes - they can go from perfectly golden to dark brown if you leave too long. That said, a little extra-charred is fine at my house...some people like them that way! ; )
The Best Oven Roasted French Fries!
Russet Potatoes - any amount
Avocado Oil or Olive Oil
Kosher Sea Salt or Kosher Salt
Heat oven to 450 degrees. Put oven racks on the highest and lowest levels.
Rinse potatoes under water and dry. Slice potatoes in half and cut each half in half again (lengthwise) - then slice each of these slices into thin french fry-size slices. (see picture). You basically want to slice the potatoes into thin slivers.
Place potato slices into bowl and drizzle avocado or olive oil all over slices. Mix well using your hands to really coat the slices with oil. Spread oiled potato slices on sheet pans. Make sure to spread in one layer so they have room to roast (don't crowd them). You can sprinkle a little salt on them or wait until they are finished and sprinkle with salt when hot out of the oven.
Place sheet pans into the oven and after about 10-12 minutes check them and use a spatula to flip them over. Then put them back in for another 3-5 minutes. They can go from perfectly brown to charred so watch them closely in the last few minutes of roasting!
