Grilled Lemon Chicken

 
Here's another very easy and very delicious recipe!  I make this quite frequently when the weather gets warm.  It tastes great hot or cold, can be used to make quesadillas & fajitas, or just stick it on a skewer and it makes a great appetizer.  You'll love it just like my family does...hope you try it!

Grilled Lemon Chicken
adapted (slightly) from The Barefoot Contessa Cookbook

1/2 cup freshly squeezed lemon juice
1/2 cup olive oil
1-2 teaspoons kosher salt
1 teaspoon freshly ground pepper
1 - 2 Tablespoons chopped fresh thyme (oregano would also be good)
2 pounds boneless & skinless chicken breasts

Place chicken into a gallon-size, zip-loc type bag.  Whisk all the ingredients together and pour over the chicken.  Seal the bag and place into a dish (in case of leakage) and refrigerate.  Allow to marinate in the refrigerator for at least 4 hours or overnight.
Heat charcoal grill and cook breasts for 8-10 minutes per side until just cooked through.  Remove to dish and cover with foil to allow juices to distribute before slicing.
