Chocolate Shavings & Curls

These little chocolate decorations took just a few minutes to make.  Really.  I use them to adorn my favorite Mocha Chip Cupcakes!!!

This is a chunk of Callebaut semi-sweet chocolate.  These days, one can find bulk, high-end chocolate at most supermarkets.  In addition to Callebaut some of my favorites are El Rey, Sharffen Berger, and Valrhona.

Put chocolate in the microwave for about 10 seconds on high.  Take chocolate out, should feel a little warm.  Shavings can be done without warming but they will come out a little better if chocolate is warmed slightly.

I use a vegetable peeler to shave the chocolate --see the tight curls?  Look at the first picture above --the shavings on the bottom of the picture were made when the chocolate was warmed for only 10 seconds.  These curls were made after the chocolate was heated for another 10 seconds.
This is my chocolate box.  I love it!!!  Chocolate should be stored in a cool and dry place.  I wrap my bulk chocolate in plastic wrap --keep the tags so you know what type (i.e., unsweetened, semi-sweet, etc.).
