Ceasar Salad: The Easiest!


This tastes like you worked sooo hard to make a very authentic ceaser dressing.  Nope, super easy.  The secret is fish sauce.  Fish sauce is a Vietnamese condiment and the main ingredient is anchovies.  Think this is too good to be true?  Try it and see for yourself! 

Ceasar Salad
2 scant Tablespoons Fish Sauce (scant means a little less than)
1 Tablespoon Freshly Squeezed Lemon Juice
1 teaspoon finely chopped garlic
3 Tablespoons Olive Oil
½ teaspoon freshly ground pepper or to taste
4 cups Romaine lettuce
½ cup or to taste finely shredded Parmigiano Reggiano Cheese

Whisk the first 5 ingredients together.  Toss the lettuce with cheese and then pour on dressing and toss again.  Add more pepper and/or cheese if desired.


I have shown two choices for fish sauce --the Thai Kitchen brand is more widely available
I have used two different graters, both are somewhat "fine" but the one on the right is more delicate and I prefer that for this recipe --kind of attaches to the lettuce a little more
I frequently prep all my ingredients in the morning or afternoon--I have shredded the cheese onto wax paper so it is ready to be stored until dinner time.
