Chocolate Chip Cookie Ice Cream Sandwiches

I just served these for dessert at a dinner party a few nights ago.  I had Fitzy and her boys over and another family.  This is so easy and a great make-ahead dessert.  The key to this dessert is to freeze the cookies before you fill them with softened ice cream.  These are always a huge hit with kids and adults!  I hope you make and enjoy these many times during the summer.  That's what we do at my house! :)

Chocolate Chip Cookie Ice Cream Sandwiches

1/2 gallon homemade vanilla ice cream (or Haagen-Dazs Vanilla)
48 homemade chocolate chip cookies


Make cookies, I prefer the recipe for my chocolate chip cookies (this can be done several weeks in advance!).  After cookies have cooled completely, remove to wax paper lined sheet pan.  Stack in single layers between sheets of wax paper.  Store in freezer until cookies are completely frozen.  When ready to make ice cream sandwiches remove ice cream from freezer and allow to soften (not melt!) about 10 minutes on the kitchen counter.  Place one scoop of ice cream on a cookie and top with another cookie, press down and use off-set spatula to smooth sides.  Place back on wax lined sheet pan and return to freezer until ice cream hardens (about an hour).  Enjoy!!!
