Roasted Baby Back Ribs: The Easiest Recipe in the World!

 
Yep, that's right, this is The Easiest Recipe in the World!  Yahoo!  My husband and I are celebrating our 20th Anniversary this week.  People always say things to him like, "You are so lucky!  Your wife is such a great cook!"  Even though we are celebrating 20 years of marriage we have actually been a pair for 26 years.  He reminds me that when he met me I really didn't know how to cook (much)! Ha!  It's true.  I did cook, but nothing fancy, just the basics.  This is one of those very basic recipes but the taste factor is out-of-this-world delicious!

Oven-Roasted Baby Back Pork Ribs
from The Fannie Farmer Cookbook

4 pounds of pork baby back ribs, usually 2 whole racks
kosher salt
freshly ground pepper

Preheat oven to 425 degrees.  Season ribs with kosher salt and freshly ground pepper --generously on both sides.  Place a rack into a roasting pan or sheet pan and place ribs on top of rack.  Roast for 30 minutes.  Turn ribs over and roast another 30 minutes.  That's it!  Enjoy!
