Arugula, Watermelon, & Feta Salad: Kate's Favorite!



This is Kate.  She is one of my favorite girls --just adore her!  As you can see she recently graduated and we will miss her terribly next year.  Kate's favorite salad might just become your favorite, too.  It is so perfect for summer, it is crisp, clean, and delicious.  I just love the flavors and textures of this salad.  It couldn't be easier to prepare so please make it and you'll see why it's Kate's Favorite!
 
Arugula, Watermelon, & Feta Salad
adapted from Everyday Food

2 Tablespoons white wine vinegar
2 Tablespoons olive oil
kosher salt
freshly ground pepper
5 or 6 ounces baby arugula
1/4 medium red onion, thinly sliced
1-pound piece chilled, seedless watermelon, rind removed, cut into small chunks (1 t0 2 cups)
4 ounces feta cheese, cubed or crumbled

Rinse outside of watermelon with cold water before cutting!  In a small bowl, whisk together vinegar and oil.  Season with kosher salt and freshly ground pepper, whisk to incorporate.  In a large bowl, combine arugula and onion; toss with dressing to taste (don't overdress).  Gently toss with watermelon and feta.  Enjoy!
