Yahoo! Happy Summer! Yes, I am back. I never planned to leave for such a long time but it has been busy around my house with a certain someone graduating from 8th grade. :)
This my latest riff on my heirloom cake. I found some beautiful strawberries at the farmer's market yesterday. I whisked 8 ounces of heavy cream with 8 ounces of mascarpone cheese. Added a few teaspoons of powdered sugar. I covered the first layer with the mascarpone whipped cream, added a layer of sliced strawberries and another thin layer of cream. I topped it with the second layer of heirloom cake, added a layer of mascarpone whipped cream to the top and adorned with whole strawberries! Below I am at my in-laws bringing the cake over for our cook-out. It was the perfect cake for Father's Day! The slice is the last ---my kids are sharing it this morning at breakfast! Summer treat!
